Unfortunately, they apparently decided to not support choosing mail profiles with that VBO. I think it would be a great update though. If you need that functionality badly, it shouldn't be that hard to take the Outlook VBO and create a custom version of it in which you add code that chooses which profile to use based on input. I haven't done it, so I'm postulating here. There are methods in .net that can accomplish this. You'd just need a .net developer to help you with that.
