Depending upon how the pdf was created options include clipboard, Accessibility Mode, OCR, and exporting the data (an option available if you are using Adobe Pro). It sounds like your PDF is a true document rather than a scan, so as well as Adobe Pro there are other cheaper tools that can be purchased on the internet for extracting text from such a document.
