Improve Quick Create experience

We are upgrading from 20.3 to 24.1 and have seen a loss of functionality with respect to Quick Creates.

When clicking the out-of-the-box Create button, Chorus immediately fills the dropdown with the first quick create in the list and launches it which is a bad experience when a user is wanting to select an item further down the list.   Note: our users only use custom quick creates and do not have access to the Create Work, Create Source, Create Folder options.  This request is to start with a blank dropdown and only launch the quick create after a user has made a selection.

We have deployed a work around by creating a custom menu button to hold the list of quick creates we use, but the downside of this is we cannot disable the out-of-the-box Create button so now there are both options on the screen.  This version would be acceptable if the Create button can be hidden while being able to quick create from a custom menu (in version 24.1 we cannot disable the Create button and have quick creates work from the custom menu button).
