Which Version of PDF is required to Automate the Unstructured PDF documents

Hi ,

We are using the "Acrobat PRO DC" Version of PDF's. Is this version is helpful to fetch the required fields data from the Unstructured/Not Standardized PDF documents using API calls.

Please, let me know the required version to handle this.
